Brown-butter matcha cookies
The matcha gives colour and flavour, the brown butter keeps them tasting like proper bakery cookies.
Ingredients
Use this as a guide, not a contract. Small swaps or tiny changes in amounts won't ruin it.
- 115 g unsalted butter
- 120 g light brown sugar
- 80 g white sugar
- 1 tbsp honey
- 1 egg
- 190 g plain flour
- 1/2 tsp baking soda
- 1–1.5 tbsp matcha powder
- 150 g milk chocolate chips or chopped milk chocolate
Method

Melt the butter in a pan over medium heat until just browned around the edges (or simply melted). Tip into a bowl to cool slightly.

Whisk in brown sugar, then white sugar and a squeeze of honey until glossy. Add the egg and whisk until smooth.

In a separate bowl, whisk flour with baking soda and matcha until evenly green.

Fold the dry mix into the butter mixture until just combined. Stir in milk-chocolate chips or chopped chunks.

Scoop onto a lined tray, spacing well. Bake at 175–185°C for 11–16 minutes until the edges are set and the centres are still soft.

Cool on the tray a few minutes, then move to a rack to finish setting.
Pull them out when the edges are set but the centre still looks a bit soft. They firm up on the tray as they cool.

Quick questions
Can I skip the brown butter step?
Yes. Just melt the butter gently until liquid, let it cool a bit, then carry on. You lose a bit of nutty flavour but the cookies still work. Ask the AI if you want a version using softened butter instead.
Don't like matcha / want less?
Drop the matcha down or swap some of it for cocoa. If you tell the AI what you like – more chocolate, less green tea – it can give you a custom version in one go.
