Lemon Amaretti Biscuits
Soft almond biscuits with bright lemon flavor and a glossy, crackled top.

Method
- 1Preheat oven to 160°C. Line a baking tray with parchment paper.
- 2Mix ground almonds and icing sugar together.
- 3Whisk egg whites to stiff peaks.
- 4Fold almond mixture into egg whites gently.
- 5Add lemon zest, juice, vanilla and salt. Mix until combined.
- 6Roll teaspoons of mixture in icing sugar.
- 7Place on baking tray, space them out.
- 8Bake for 12-15 minutes until just set but still soft.
- 9Cool on the tray for 5 minutes, then transfer to a wire rack.
Notes
Weigh ingredients if you can. Cups are chaos; scales are repeatable.
Oven temps lie. If your bakes run hot or pale, adjust by 10–15°C and note it for next time.
