Lemon Amaretti Biscuits

Soft almond biscuits with bright lemon flavor and a glossy, crackled top.

Method

  1. 1Preheat oven to 160°C. Line a baking tray with parchment paper.
  2. 2Mix ground almonds and icing sugar together.
  3. 3Whisk egg whites to stiff peaks.
  4. 4Fold almond mixture into egg whites gently.
  5. 5Add lemon zest, juice, vanilla and salt. Mix until combined.
  6. 6Roll teaspoons of mixture in icing sugar.
  7. 7Place on baking tray, space them out.
  8. 8Bake for 12-15 minutes until just set but still soft.
  9. 9Cool on the tray for 5 minutes, then transfer to a wire rack.

Notes

Weigh ingredients if you can. Cups are chaos; scales are repeatable.

Oven temps lie. If your bakes run hot or pale, adjust by 10–15°C and note it for next time.
