Chicken Pasta

Method

  1. Slice the garlic, half onion, chilli and pepper. Fry in a pan with good olive oil until softened.
  2. In a separate pan, season the chicken with paprika, mixed herbs, salt and pepper. Fry on medium heat until cooked through.
  3. Set the chicken aside, then add it to the pan with the fried vegetables.
  4. Cook the spaghetti in salted boiling water until al dente. Don't overcook it.
  5. Drain the pasta and add it to the pan with the chicken and vegetables.
  6. Add a good handful of grated cheese and toss everything together until the cheese melts through.
  7. Serve with fresh basil on top. White wine on the side if you're into that.

Notes

Salt the water properly and keep a mug of pasta water. That’s your sauce thickener.

Resting matters. Give meat a few minutes off the heat so juices settle.
