Method
- If making sweet potato fries: slice them, toss with olive oil, salt, pepper and herbs. Bake at 170°C for 40 minutes. Start these first.
- Make the sauce: mix Greek yogurt, mayo, ketchup, chopped parsley, sliced gherkins and mustard in a bowl. Set aside.
- Fry the sliced onions in olive oil until soft and slightly caramelised. Remove from the pan and set aside.
- In a bowl, add the mince with chopped parsley, black pepper, salt, chilli powder and garlic powder. Mix well.
- Shape into balls, then flatten into patties. If using lean mince (5%), you can leave the oil in the pan. For fattier mince (20%), wipe out the excess.
- Fry the patties in the same pan. Once nearly done, add a slice of cheese on top and put a lid on to melt it.
- Remove the burgers. Add butter to the pan and toast the buns cut-side down until golden.
- Assemble: spread sauce on the bottom bun, add lettuce, the burger, then the fried onions. Close it up.
Notes that actually help
Resting matters. Give meat a few minutes off the heat so juices settle.
