Avocado Salad

Fresh avocado, tomato, and cucumber tossed in a lemon–oregano dressing.

Method

  1. 1In a bowl add the sliced avocado, tomatoes, cucumber, red onion and chopped parsley.
  2. 2Make the dressing: whisk olive oil with dried oregano, black pepper, salt, finely sliced chilli if using, lemon juice and white vinegar.
  3. 3Pour the dressing over the salad, toss gently to coat, taste and adjust seasoning, then serve immediately.
