Avocado Salad
Fresh avocado, tomato, and cucumber tossed in a lemon–oregano dressing.

Method
- In a bowl add the sliced avocado, tomatoes, cucumber, red onion and chopped parsley.
- Make the dressing: whisk olive oil with dried oregano, black pepper, salt, finely sliced chilli if using, lemon juice and white vinegar.
- Pour the dressing over the salad, toss gently to coat, taste and adjust seasoning, then serve immediately.
