The idea is simple: good olive oil, sharp acid, a bit of herb and crunch. The AI can help scale it up for a crowd.

Ingredients

Don't stress the exact grams. Use this as a guide and taste the dressing as you go.

  • 1 avocado – sliced
  • 2 tomatoes – sliced
  • 1/2 cucumber – sliced
  • 1/2 small red onion – sliced
  • 1 tbsp parsley – chopped
  • 80 ml extra-virgin Italian olive oil
  • 1 tbsp dried oregano
  • 2 tsp black pepper
  • 1 tsp salt
  • 1 fresh chilli (optional)
  • ~1 tbsp lemon juice
  • 1 tbsp white vinegar (high quality)

Method

    In a bowl add the sliced avocado, tomatoes, cucumber, red onion and chopped parsley.

    Make the dressing: whisk olive oil with dried oregano, black pepper, salt, finely sliced chilli if using, lemon juice and white vinegar.

    Pour the dressing over the salad, toss gently to coat, taste and adjust seasoning, then serve immediately.

Add the dressing, toss gently and taste. If it feels flat, add a touch more salt, lemon or vinegar.

Quick questions

Can I make this ahead of time?

Best fresh, because avocado browns. If you want to prep ahead, chop everything except the avocado and dressing, then mix and slice the avocado right before you eat. Or ask the AI for a “meal prep” version that holds better.

What if I don't like raw onion?

Use less, slice it very thin, or leave it out. You can swap it for spring onion, or ask the AI for a no-onion version with the same vibe.
