Apple Crumble

Buttery crumble topping over soft, spiced apples.

Method

  1. Heat oven to 180°C.
  2. Make the crumble: combine oats, flour and brown sugar in a bowl. Add the cold butter and rub together until you get a rough, clumpy texture.
  3. For the apples: heat a pan over medium heat. Add the sliced apples, 2 tbsp brown sugar, lemon juice and mixed spice. Cook for a few minutes until the apples start to soften.
  4. Tip the apples into an 8x8 or 10x10 inch baking dish. Spread the crumble mixture evenly over the top.
  5. Bake for 20–25 minutes until the topping is golden brown.
  6. For the custard: warm the cream in a small pan with a pinch of nutmeg and cinnamon. Whisk gently until slightly thickened.
  7. Let the crumble rest for 15–30 minutes before serving. It sets better and won't burn your mouth. Serve with the warm custard.

Notes

Weigh ingredients if you can. Cups are chaos; scales are repeatable.

Oven temps lie. If your bakes run hot or pale, adjust by 10–15°C and note it for next time.
