Apple Cake

One-bowl Italian-style apple cake — melt, mix, bake.

Method

  1. 1Heat oven to 180°C. Line and lightly butter a small baking tin (approx 20 cm).
  2. 2Peel apples and slice (medium thickness).
  3. 3In a bowl, whisk eggs with sugar until combined, then whisk in melted butter.
  4. 4Fold in flour and baking powder until just smooth (don’t overmix).
  5. 5Stir in the alcohol if using, then fold through the sliced apples.
  6. 6Scrape batter into the lined tin and level.
  7. 7Bake about 40 minutes at 180°C until golden and a skewer comes out clean.
  8. 8Cool slightly, slice and serve (plain, or with cream/ice cream).

Notes

Weigh ingredients if you can. Cups are chaos; scales are repeatable.

Oven temps lie. If your bakes run hot or pale, adjust by 10–15°C and note it for next time.
