Apple Cake

Method
- Heat oven to 180°C. Line and lightly butter a small baking tin (approx 20 cm).
- Peel apples and slice (medium thickness).
- In a bowl, whisk eggs with sugar until combined, then whisk in melted butter.
- Fold in flour and baking powder until just smooth (don’t overmix).
- Stir in the alcohol if using, then fold through the sliced apples.
- Scrape batter into the lined tin and level.
- Bake about 40 minutes at 180°C until golden and a skewer comes out clean.
- Cool slightly, slice and serve (plain, or with cream/ice cream).
Notes
Weigh ingredients if you can. Cups are chaos; scales are repeatable.
Oven temps lie. If your bakes run hot or pale, adjust by 10–15°C and note it for next time.
