One-bowl apple cake

Thin sliced apples tucked into a light batter. Easy to serve warm with cream, ice cream or just on its own.

Ingredients

Use eating apples you like. If they're very sweet, you can shave a little sugar off.

  • 150 g plain flour
  • 115 g butter, melted
  • 120 g caster sugar
  • 1 tsp baking powder
  • 2 eggs
  • 4 medium apples, peeled (slice)
  • 2 tbsp alcohol for flavour (e.g. rum, brandy)

Method

    Heat oven to 180°C. Line and lightly butter a small baking tin (approx 20 cm).

    Peel apples and slice (medium thickness).

    In a bowl, whisk eggs with sugar until combined, then whisk in melted butter.

    Fold in flour and baking powder until just smooth (don’t overmix).

    Stir in the alcohol if using, then fold through the sliced apples.

    Scrape batter into the lined tin and level.

    Bake about 40 minutes at 180°C until golden and a skewer comes out clean.

    Cool slightly, slice and serve (plain, or with cream/ice cream).

Every oven is different. If the top is dark but the centre isn't set, loosely cover with foil and bake a bit longer.

How do I know it's done?

A skewer in the centre should come out without wet batter. A few soft crumbs are fine. If it's still liquid, give it more time.
